The violet-blue color of globe artichoke flowers is due to vacuolar, water-soluble anthocyanins. Delphinidin, a specific type of anthocyanin, is the precursor of this pigment. It forms a stable complex with metal ions like iron (Fe), magnesium (Mg), and calcium (Ca) and flavones. This so-called protocyanin absorbs red light and reflects blue light.
